Cook Your Sides First

1. Baby Potatoes

  • Preheat oven to 400°F.
  • Toss halved potatoes with olive oil, rosemary, salt, and pepper.
  • Roast for 30–35 minutes, flipping once, until golden and crisp.

2. Macaroni Shells

  • Cook shells in salted water until al dente. Drain.
  • In a saucepan, melt butter, stir in milk or cream, then add cheese.
  • Stir until smooth. Fold in shells. Season with salt and pepper to taste.

3. Boiled Brussels Sprouts

  • Boil trimmed brussels sprouts in salted water for 10–12 minutes until fork-tender.
  • Drain and toss with butter if desired.

Sear the Filet Mignon

  • Season steaks generously with salt and pepper.
  • Heat olive oil in a cast iron skillet over medium-high.
  • Sear 3–4 minutes per side for a beautiful crust.
  • Add butter, garlic, and thyme. Baste with the butter as it melts.
  • Cook to your liking (125°F for medium-rare). Let rest.

Sauté the Shrimp
